• 3 cups all-purpose flour
  • 3 large eggs
  • 1 1/2 tablespoons olive oil
  • 6 tablespoons water (more if needed)

Directions

  • place flour on the countertop or in a bowl
  • make a well in the center of the flour
  • place eggs, olive oil, water, and salt in the well
  • use a fork or spoon to start mixing the dough
  • mix till all ingredients are combined
  • flour your work surface and kneed dough until smooth
  • wrap the dough in plastic wrap and let rest for 30 minutes
  • after 30 minutes flour your work surface and cut the dough into several smaller pieces
  • run your dough thru the pasta machine slowly lowering the width
  • run pasta thru the cutter or cut by hand
  • hang to dry or go straight into boiling water
  • serve with your favorite sauce
