If you’re in the mood for something richer, consider a filling of creamy goat cheese mixed with herbs and roasted red peppers, providing a delightful contrast to the tender chicken. For a healthier option, use a mixture of quinoa, spinach, and feta cheese, creating a nutritious and flavorful stuffing that is equally satisfying. Finally, you can add a touch of spice by incorporating chorizo or spicy Italian sausage into the filling for an extra kick. Each of these variations allows you to customize chicken rollatini to suit your taste preferences while keeping it deliciously comforting.
