Seven Layer Cookies Recipe
Seven layer cookies, also known as rainbow cookies, are a delightful Italian treat that showcases vibrant red, white, and green layers, making them perfect for festive occasions. Ingredients
- 4 eggs separated
- 1 cup sugar
- 8oz Almond Paste
- 2 1/2 sticks softened unsalted butter
- 1 tsp Almond Extract
- 2 Cups All Purpose Flour
- 1/2 tsp salt
- 12-oz jar apricot preserves, heated and strained
- 7 to 8 oz semisweet chocolate
- 18 to 30 drops red food coloring
- 18 to 30 drops green food coloring
Directions
- Chop almond paste into small pieces add to mixing bowl
- Add pre softened butter to mixing bowl (room temp)
- Start mixer then slowly add sugar
- separate eggs into yolks and whites.
- Add almond extract and egg yolks
- add salt and flower
- whisk egg white till frothy then add to mixing bowl
- separate mixture evenly into 3 bowls
- add red food color to one, then green to another carefully mix
- coat 1/4 tray with butter or pam then place parchment paper
- lightly spry pam on parchment paper
- add batter and spread out evenly for each
- place in oven at 350° for appx 8 minutes
- remove from oven then let cool
- flip onto another try with parchment paper (red or green first)
- spread a thin layer of apricot preserves
- flip white layer on top
- spread a thin layer of apricot preserves
- flip last layer on top
- gently press together
- place chocolate in double boiler
- when melted and smooth use spatula to spread on top (thin even layer)
- refrigerate till chocolate hardens
- use another tray and parchment paper to flip
- coat remaining side with chocolate
- back into the fridge
- when all is set use sharp knife or bread knife to cut small even pieces (be gentle as to not crack the chocolate)
