Directions

  • butterfly the chicken breasts and pound thin with a mallet
  • saute spinach in olive oil, garlic, salt, and pepper
  • add salt and pepper to each chicken breast
  • place a piece of prosciutto, provolone, spinach, mozzarella, and parmesan
  • tightly roll your chicken as seen in the video
  • roll each one in flour, then egg and finally bread crumb
  • place each in a hot pan with olive oil seam side down 2 to 2 1/2 minutes per side
  • place pan with chicken in the oven at 450° for 10 to 12 minutes
  • set chicken aside to cool
  • slice on an angle

  • add white wine, balsamic vinegar, and chicken stock
  • reduce till thick
