Tips:

There are many creative variations of rainbow cookies that can add a unique twist to this classic treat. For a tropical flair, consider adding coconut to the almond batter and using pineapple preserves between the layers, giving it a refreshing taste. If you want to incorporate chocolate, try making a chocolate layer by mixing cocoa powder into one of the batters, or using chocolate ganache as a filling instead of apricot preserves. For a nutty twist, you can replace the almond flavoring with hazelnut or pistachio extract, and use corresponding preserves for a delightful change. Lastly, you can experiment with different food colorings to create unique designs, such as ombre layers or stripes, allowing for a fun and colorful presentation. Each of these variations allows you to put your own spin on rainbow cookies while still celebrating their traditional essence.
